Poulet Roti (french Roast Chicken) Recipe

Ingredients

Roasting chicken (3-4lb)

Lemon
Salt & pepper

Fresh tarragon OR

Dried tarragon

(To 4) Strips bacon
2
tb
(To 4) butter; melted
Fresh watercress garnish

Directions

  1. Preheat oven to 400 degrees F.
  2. Wipe chicken with damp towel.
  3. Rub with lemon.
  4. Sprinkle cavity with tarragon.
  5. Salt and pepper outer skin.
  6. Place chicken on a rack in a shallow roasting pan.
  7. Cover with bacon and roast for 30 minutes.
  8. Remove bacon, baste with butter and pan juices.
  9. Roast another 30 minutes.
  10. Baste, and roast a final 10 minutes.
  11. Remove chicken, let stand 5 minutes before carving.
  12. Garnish with watercress.
  13. Makes 4 servings.
