Fryer chicken without breast meat (OR

Chicken legs & thighs & wings

Salted mustard green, shredded

Directions

  1. This is a lovely, simple dinner soup.
  2. Preparation: Separate thighs, legs and wings from chicken carcass, and chop them into bite-size pieces.
  3. Be sure to remove any bone splinters.
  4. Chop carcass into several pieces.
  5. Drain the mustard green; cut into 2" square pieces.
  6. Soup: Put chicken and cold water in large pot.
  7. Bring to boil; skim froth and chicken fat; reduce heat to simmer.
  8. Simmer for 2 hours.
  9. Remove chicken carcass.
  10. Add mustard green; simmer another 15 minutes.
  11. Transfer soup with pieces and mustard green to serving bowl.
  12. Serve.
