Chinese Noodles With Peanut Sauce Recipe

Ingredients

Vermicelli noodles, cooked to yield 4 cups

Skinned, boneless chicken breasts, cut into match stick pieces

Soy sauce

Dry sherry

Minced fresh ginger

Minced fresh garlic
½

Red onion, thinly sliced

Carrot, cut into matchstick pieces
½
Cucumber, peeled, seeded and cut into matchstick pieces

Roasted peanuts, coarsely chopped

Peanut butter

Soy sauce

Rice vinegar

Chicken broth or water

Directions

  1. Make Peanut Sauce and set aside.
  2. Cook vermicelli on range, in the conventional way.
  3. Drain and keep warm.
  4. Place chicken in a 3-quart casserole.
  5. Coat chicken with soy sauce and sherry.
  6. Add ginger, garlic and onions; toss.
  7. Cover with lid or vented plastic wrap.
  8. Stirring midway through cooking, microwave on high 4 minutes or until chicken is no longer pink.
  9. Add carrot; cover again and microwave on high 1 1/2 minutes.
  10. Add cucumber and warm noodles; toss with Peanut Sauce.
  11. Sprinkle chopped peanuts over top.
  12. Note: Partially freeze chicken to make cutting easier.
  13. Peanut Sauce: Place all ingredients in a 1 cup glass measure.
  14. Microwave on high for 1 minute.
  15. Whisk mixture until well combined; set aside.
