Chicken With Avocado Salsa Recipe

Ingredients

Boneless chicken breast halves
Chili powder, salt and pepper

Ripe avocado

Fresh lime juice
½

Chunky salsa

Tomato, chopped

Green onions with tops, thinly sliced

Heated corn tortillas or lettuce leaves

Directions

  1. Arrange chicken around the edges of a 9" pie plate or baking dish.
  2. Sprinkle with chili powder, salt and pepper.
  3. Cover with vented plastic wrap.
  4. Rotating dish midway through cooking, microwave on high 5 to 6 minutes; set aside.
  5. Peel, seed and chop avocado.
  6. Combine with lime juice in a small bowl.
  7. Add salsa, tomato and green onions; toss gently.
  8. Slice cooked chicken, lengthwise, into 1 to 2" strips and arrange on tortillas, making 4 servings.
  9. Top with salsa.
  10. Microwave on 50 % (medium) 2 minutes or until heated.
  11. Makes 4 servings.
