Directions

  1. Preheat oven to 450 degrees.
  2. Pat pork chops dry.
  3. Season meat with salt and pepper.
  4. Melt butter in heavy large skillet over high heat.
  5. Dredge pork chopes in flour, shaking off excess.
  6. Add to skillet and cook until brown, about 4 minutes per side.
  7. Transfer to roasting pan (do not wash skillet).
  8. Bake pork chops until thermometer inserted in thickest part registers 145 degrees, about 20 minutes.
  9. Preheat broiler.
  10. Pour off drippings from skillet.
  11. Add vinegar to skillet and bring to boil, scraping up any browned bits.
  12. Add maple syrup.
  13. Reduce heat to low, cover and cook 10 minutes.
  14. Meanwhile, transfer chops to broiler pan.
  15. Pack 2-1/2 tablespoons brown sugar evenly atop each.
  16. Broil pork until sugar is dark brown and glazed, turning pan to brown evenly, about 1 minute.
  17. Serve, passing sauce separately.
