Directions
- Preheat oven to 450 degrees.
- Pat pork chops dry.
- Season meat with salt and pepper.
- Melt butter in heavy large skillet over high heat.
- Dredge pork chopes in flour, shaking off excess.
- Add to skillet and cook until brown, about 4 minutes per side.
- Transfer to roasting pan (do not wash skillet).
- Bake pork chops until thermometer inserted in thickest part registers 145 degrees, about 20 minutes.
- Preheat broiler.
- Pour off drippings from skillet.
- Add vinegar to skillet and bring to boil, scraping up any browned bits.
- Add maple syrup.
- Reduce heat to low, cover and cook 10 minutes.
- Meanwhile, transfer chops to broiler pan.
- Pack 2-1/2 tablespoons brown sugar evenly atop each.
- Broil pork until sugar is dark brown and glazed, turning pan to brown evenly, about 1 minute.
- Serve, passing sauce separately.
