Boneless pork roast
Directions
- Prepare grill for cooking.
- Stir together 1 cup peach nectar, corn syrup, lemon peel, lemon juice, ginger, and salt in medium saucepan.
- Bring to a boil over medium heat, stirring frequently; boil for 5 minutes.
- In a small bowl, stir together remaining 1/4 cup peach nectar and the corn starch until smooth; stir into saucepan.
- Boil for 1 minute, stirring constantly.
- Remove from heat and cool.
- Cut pork into 1-inch thick slices.
- Place on grill 6 inches above medium-hot coals; cook for about 15 minutes, turning occasionally.
- Brush with some of the peach sauce.
- Grill for 15 to 20 minutes more or until pork is tender, brushing with sauce and turning occasionally.
- Reheat remaining sauce and serve with pork.
