PORK CHOPS:

Boneless pork loin chops, 1/2 inch thick (4)

Whole grain mustard

Dry white wine

Directions
- GREEN BEANS with SHALLOTS: FOR THE GREEN BEANS: Stem and string the beans.
- Peel and mince the shallots.
- Bring 3/4 cup water to the boil in a large saucepan.
- Add the beans, cover, and cook over medium-high heat until almost tender, about 4 minutes.
- Add the shallots, butter, salt, and pepper.
- Cook for 2 minutes longer.
- Cover and keep warm.
- FOR THE PORK CHOPS: Sprinkle chops with salt and pepper.
- Heat the oil in a large skillet and saute the chops until brown in both sides and just cooked through, about 8 minutes.
- Remove chops; cover and keep warm.
- Add the mustard and wine to the skillet; stir and simmer until slightly reduced, about 1 minute.
- Stir in the cream and simmer until thickened slightly, about 2 minutes.
- SERVING: Transfer chops to warmed dinner plates, top with mustard sauce, and serve immediately with green beans.
