Ingredients

Trimmed/boned loin pork

Ground veal

Minced shallot

Fennel seed

Crumbled dried sage

Crumbled dried thyme

Freshly ground pepper

Directions

  1. Grind pork loin.
  2. Mix with other ingredients in bowl, using hands.
  3. To check seasoning, pinch off small piece of mixture and fry until cooked through.
  4. Taste, then adjust seasoning of uncooked portion. (Can be prepared 2 days ahead and refrigerated. ) Use this in Wild Rice w/Sausage.
  5. Sausage can also be formed into patties and fried for breakfast. (Makes about 1 1/3 pounds. )
