Trimmed/boned loin pork

Ground veal

Minced shallot

Fennel seed

Crumbled dried sage

Freshly ground pepper
Directions
- Grind pork loin.
- Mix with other ingredients in bowl, using hands.
- To check seasoning, pinch off small piece of mixture and fry until cooked through.
- Taste, then adjust seasoning of uncooked portion. (Can be prepared 2 days ahead and refrigerated. ) Use this in Wild Rice w/Sausage.
- Sausage can also be formed into patties and fried for breakfast. (Makes about 1 1/3 pounds. )
