Pork loin roast

Sage (ground)

Garlic powder

Potatoes, cut in wedges
Directions
- In a small bowl mix sage and garlic powder, plus 1 ts salt and 1/4 ts pepper.
- Rub on roast.
- Place on rack in shallow roasting pan.
- Roast in pre-heated 325 F oven for 1 hour.
- Add potatoes.
- Baste with pan drippings.
- Roast 1 to 1 1/2 hours longer, basting potatoes occasionally, until potatoes are tender and meat thermometer, inserted in centre of roast, registers 170 F.
- Let stand 10 minutes before slicing.
