Bok choy, diagonally sliced

Carrots, diagonally sliced

Red bell pepper, cut in 3/4-inch pieces

Broken walnut pieces
Directions
- Partially freeze pork; thinly slice across grain into bite-size strips.
- Place pork in a shallow baking pan or in a heavy plastic bag.
- Combine soy sauce, corn starch, and water for marinade.
- Pour half over pork, turning to coat.
- Reserve remaining marinade.
- Refrigerate pork in marinade for 30 minutes.
- Preheat wok or large skillet over high heat; add oil, chili powder and cumin.
- Add drained pork amd stir-fry until browned, about 5 minutes.
- Remove pork from wok and set aside.
- Add the vegetables to the wok; stir-fry for 2 minutes, or until tender-crisp. (Add more oil, if needed. ) Add pork, walnuts and the reserved marinade; stir-fry 1 to 2 minutes until heated through.
- Serve immediately.
